“Wuzang” are the five unique aging techniques. The ways of “Natural Aging, Earth Aging, Cellar Aging, Water Aging and Cave Aging” are used to produce spirits with special methods.
At the beginning of Spring, blending the spirits which were distilled last year, putting them on the soil and exposed to the sunshine. Then all low-boiling point extract will be evaporated.
In the next summer, putting the Natural Aged spirits under the trees, letting them enjoy the wind in the daytime and the dew and rain in the night, which helps to absorb the Aura of Tiandi (Heaven and Earth).
Cellar aging: In the Autumn of the third year, moving Earth Aged spirits into the centurial homothermal cellar, burying it deeply and keeping the jar exposed, which helps to absorb the unique beneficial elements from the special vermilion soil in Maotai Town.
In winter, replacing a bigger jar for Cellar Aged spirits and putting them into a pool for removing the heat and soil smell. Then the spirits were matured, quieted down and the molecule were fused. Going through the four steps of aging, after the final blend by the Master, the spirits will be sealed in the jar.
Moving the sealed spirits into the cave. This cave must be curving in deep, with spring water leaking from the cave wall, it also requires the mild temperature and the final spirits will be produced with time goes.
